Fried Mee Hoon (Fried Rice Noodles)

Have been spending the last two days cleaning my apartment and with everyone away from home, I'm feeling a little blue. Mom isn't home, and I can't go home to have some comfort food. Bummer. So, I decided to check my pantry and fridge/freezer to see what goodies I can find to whip up a comfort dish. Had bought rice noodles a couple of days ago and found minced pork, fish cakes, prawns and vegetables in the fridge/freezer. Whoopie! Got all the ingredients to fry some mee hoon and here's my version of fried mee hoon. 

Vegetable cooking oil
1 pack mee hoon (rice noodles), soaked in water till soft and drained
1 large red onion, sliced
4 garlics, chopped
1 fish cakes, sliced
200g prawns, shelled
200g minced pork (marinate with 1 tablespoon soy sauce and 1 tablespoon oyster sauce)
4 tablespoons dark soy sauce
4 tablespoons oyster sauce
300ml water
Light soy sauce, to taste

3 stalks spring onion, finely sliced
4 large red chilies, sliced

1. Heat up oil in wok and sautĂ© the sliced onions till slightly brown. Add the marinated minced pork and fish cake slices and keep stirring till pork is almost cooked. Then add the prawns and cook till the prawns are cooked.
2. Add the dark soya sauce and oyster sauce and stir well. Add water into the mixture and mix well. Add the noodles and vegetables. Keep stir frying.
3. Once cooked, dish out and serve in a large plate.
4. Garnish the noodles with sliced spring onions and red chilies.

Serves up to 6 people.
